Sweet, woodsy rosemary syrup puts simple syrup to shame in this version of the Gin Fizz. A really lovely long cocktail, especially when garnished with an extra sprig of rosemary.
Ingredients
Sugar100 g
Water120 ml
Fresh rosemary3 sprigs
Gin50 g
Lemon10 gjuice of
Iceas neededcrushed
Seltzer wateras needed
Method
1. Add sugar and water to a clean saucepan
2. Heat until boiling
3. Add fresh rosemary to the syrup
4. Stir gently until sugar has dissolved
5. Let cool - 45 min
6. Strain with sieve and set aside
7. Add gin and lemon to a clean highball glass
8. Transfer syrup to cocktail
9. Stir until combined
10. Add ice to the cocktail
11. Top with seltzer water
12. Garnish with fresh rosemary
