Fragrant and gently spiced, this slow-cooked chicken dish would be delicious served with steamed rice and stir-fried greens. The same method would also work well with skin-on chicken thighs.

Step preview

  1. Pre-heat - 140°C
  2. Add sunflower oil to a clean Dutch oven
  3. Heat
  4. Add chicken drumsticks to the Dutch oven
  5. Fry evenly until browned - 6 min, medium heat
  6. Transfer content of Dutch oven to plate then set aside
  7. Add onion to the Dutch oven
  8. Fry - 10 min, low heat
  9. Add garlic clove, lemongrass stalk, lemongrass stalk, fresh chili and curry paste to the Dutch oven
  10. Fry - 2 min, low heat
  11. Add cane sugar and chicken stock to the Dutch oven
  12. Season with salt & pepper to taste
  13. Heat until boiling and cover
  14. Cook until tender - 1 hr 30 min, 140°C
  15. Serve immediately
