  1. Prep and set aside lemongrass stalk: finely chopped
  2. Prep and set aside fresh chili: finely sliced
  3. Pre-heat
  4. Get a clean Dutch oven
  5. Add sunflower oil
  6. Heat
  7. Add chicken drumsticks
  8. Fry evenly for 6min on medium heat until browned
  9. Transfer content of Dutch oven to plate then set aside
  10. Retrieve Dutch oven
  11. Add finely chopped onion
  12. Fry for 10min on low heat
  13. Add crushed garlic clove
  14. Add halved lengthways lemongrass stalk
  15. Add prepared lemongrass stalk
  16. Add prepared fresh chili
  17. Add curry paste
  18. Fry for 2min on low heat
  19. Add cane sugar
  20. Add chicken stock
  21. Season with salt & pepper to taste
  22. Heat until boiling and cover
  23. Cook for 1h 30min until tender
  24. Serve immediately
