  1. Prep and set aside lemongrass stalk: finely chopped
  2. Prep and set aside fresh chili: finely sliced
  3. Pre-heat - 140°C
  4. Get a clean Dutch oven
  5. Add sunflower oil
  6. Heat
  7. Add chicken drumsticks
  8. Fry evenly until browned - 6 min, medium heat
  9. Transfer content of Dutch oven to plate then set aside
  10. Get Dutch oven
  11. Add finely chopped onion
  12. Fry - 10 min, low heat
  13. Add crushed garlic clove
  14. Add halved lengthways lemongrass stalk
  15. Add prepared lemongrass stalk
  16. Add prepared fresh chili
  17. Add curry paste
  18. Fry - 2 min, low heat
  19. Add cane sugar
  20. Add chicken stock
  21. Season with salt & pepper to taste
  22. Heat until boiling and cover
  23. Cook until tender - 1 hr 30 min, 140°C
  24. Serve immediately
