Step preview

  1. Pre-heat broiler - high heat
  2. Add water and salt to a clean large saucepan
  3. Boil
  4. Add spaghetti to the pasta
  5. Cook until al dente
  6. Drain
  7. Add olive oil to a clean frying pan
  8. Heat - low heat
  9. Add onion to the frying pan
  10. Cook in frying pan until softened - approx 8 min, low heat
  11. Add zucchini and garlic clove to the frying pan
  12. Cook in frying pan while stirring occasionally - 2 min, low heat
  13. Add egg, salt & pepper, parmesan cheese and fresh basil to a clean medium bowl
  14. Beat until well combined
  15. Transfer pasta to egg mixture
  16. Transfer content of frying pan to egg mixture and mix
  17. Return egg mixture to frying pan evenly
  18. Cook until set - 10 min, low heat
  19. Broil until set
  20. Shake in frying pan
  21. Transfer content of frying pan to plate
  22. Sprinkle with parmesan cheese
  23. Garnish with fresh basil
  24. Let cool - approx 5 min
  25. Serve
