Method
1. Heat a clean frying pan - high heat
2. Add cumin seeds and coriander seeds to the frying pan
3. Toast in frying pan until fragrant
4. Add sea salt, garlic clove, red onion, fresh chili, chorizo, ground chicken and red bell pepper to the frying pan
5. Fry in frying pan until just cooked while stirring occasionally - low heat
6. Transfer content of frying pan to medium bowl
7. Add ear of corn to a clean baking sheet
8. Grill in broiler until browned and let cool
9. Once cool, slice kernels off and set aside.
10. Pre-heat frying pan - medium heat
11. Add flour tortilla and cheddar cheese to a clean work surface
12. Crush feta cheese the tortillas
13. Add parmesan cheese to the tortillas
14. Drizzle with extra virgin olive oil
15. Transfer tortillas to frying pan
16. Cook one by one in frying pan - approx 3 min
17. Slice into quarters
18. Add avocado, lime and salt & pepper to a clean small bowl
19. Mash until combined
20. Serve
