Step preview

  1. Prep and set aside sundried tomato: drained & chopped
  2. Prep and set aside red bell pepper: roasted
  3. Pre-heat on medium-high heat
  4. Get a clean blender jug
  5. Add prepared sundried tomato
  6. Add prepared red bell pepper
  7. Blend until combined
  8. Transfer sauce to small bowl
  9. Add parmesan cheese
  10. Add mascarpone cheese
  11. Add dried basil
  12. Season with salt & pepper to taste
  13. Stir until combined then set aside
  14. Get a clean large saucepan
  15. Add water
  16. Add salt
  17. Boil
  18. Add gnocchi
  19. Cook for approx 4min until tender
  20. Drain
  21. Transfer pasta to 2 baking dishes
  22. Spoon sauce into 2 baking dishes
  23. Sprinkle with parmesan cheese
  24. Broil in broiler for 8min on medium-high heat until light golden
  25. Let cool slightly
  26. Garnish with arugula
