Step preview

  1. Pre-heat broiler - medium-high heat
  2. Add sundried tomato and red bell pepper to a clean blender jug
  3. Blend until combined
  4. Transfer sauce to small bowl
  5. Add parmesan cheese, mascarpone cheese and dried basil to the sauce
  6. Season with salt & pepper to taste
  7. Stir until combined then set aside
  8. Add water and salt to a clean large saucepan
  9. Boil
  10. Add gnocchi to the pasta
  11. Cook until tender - approx 4 min
  12. Drain
  13. Transfer pasta to 2 baking dishes
  14. Spoon sauce into 2 baking dishes
  15. Sprinkle with parmesan cheese
  16. Broil in broiler until light golden - 8 min, medium-high heat
  17. Let cool slightly
  18. Garnish with arugula
