    400g (about 2¾ cups)

Step preview

  1. Add sundried tomato and red bell pepper to a clean blender jug
  2. Blend until combined
  3. Transfer purée to small bowl
  4. Add parmesan cheese, mascarpone cheese and dried basil to the sauce
  5. Season with salt & pepper to taste
  6. Stir until combined then set aside
  7. Add water and salt to a clean large saucepan
  8. Boil
  9. Add gnocchi to the large saucepan
  10. Cook until tender - approx 4 min
  11. Drain
  12. Transfer pasta to baking dish
  13. Spoon sauce into baking dish
  14. Sprinkle with parmesan cheese
  15. Grill until light golden - 8 min, Grill 2
  16. Let cool slightly
  17. Garnish with arugula
