  1. Prep and set aside red onion: finely sliced
  2. Prep and set aside sweet potato: cubed
  3. Get a clean frying pan
  4. Heat olive oil
  5. Add sausage
  6. Fry in frying pan for 10min until browned
  7. Transfer content of frying pan to plate
  8. Retrieve frying pan
  9. Add prepared red onion
  10. Add caster sugar
  11. Heat gently in frying pan until browned
  12. Transfer meat to frying pan
  13. Add prepared sweet potato
  14. Add fresh sage
  15. Season with salt & pepper to taste and cover
  16. Cook gently for approx 25min until tender
  17. Drizzle with balsamic vinegar
  18. Serve
