A hearty one-pan meal that would work as well for brunch as it would for lunch or dinner. Sweet potatoes pair beautifully with savoury sausages.

  • Red onion icon

  • Sweet potato icon

    Method

  • 1. Heat olive oil in a clean frying pan
  • 2. Add sausage and fry until browned - 10 min
  • 3. Transfer fried sausage to plate
  • 4. Add red onion and caster sugar to the frying pan and heat gently until browned
  • 5. Add sausage, sweet potato and fresh sage to the frying pan
  • 6. Season with salt & pepper to taste and cover
  • 7. Cook gently until tender - approx 25 min
  • 8. Drizzle with balsamic vinegar
  • 9. Serve
