  1. Heat olive oil to a clean frying pan
  2. Add sausage to the frying pan
  3. Fry in frying pan until browned - 10 min
  4. Transfer content of frying pan to plate
  5. Add red onion and caster sugar to the frying pan
  6. Heat gently in frying pan until browned
  7. Transfer meat to frying pan
  8. Add sweet potato and fresh sage to the frying pan
  9. Season with salt & pepper to taste and cover
  10. Cook gently until tender - approx 25 min
  11. Drizzle with balsamic vinegar
  12. Serve
