  1. Prep and set aside pork tenderloin: diced
  2. Prep and set aside onion: chopped
  3. Prep and set aside leek: trimmed & coarsely chopped
  4. Prep and set aside prunes: halved
  5. Prepare a clean work surface
  6. Add prepared pork tenderloin
  7. Season
  8. Get a clean Dutch oven
  9. Heat vegetable oil
  10. Fry pork in Dutch oven bit by bit
  11. Transfer content of Dutch oven to plate
  12. Get Dutch oven
  13. Add vegetable oil
  14. Add prepared onion
  15. Add prepared leek
  16. Fry - 5 min, medium heat
  17. Transfer pork to Dutch oven
  18. Add bay leaves
  19. Add chicken stock
  20. Simmer
  21. Stir pearl barley and cover
  22. Cook until thickened - 1 hr 30 min, low heat
  23. Get a clean small bowl
  24. Add self raising flour
  25. Add suet
  26. Add salt & pepper
  27. Mix until combined
  28. Add water
  29. Mix until dough forms
  30. Get Dutch oven
  31. Add prepared prunes
  32. Spoon dough into Dutch oven and cover
  33. Cook until light and fluffy - 15 min, low heat
  34. Serve
