Step preview

  1. Prep and set aside whole chicken: separated
  2. Prep and set aside onion: chopped
  3. Prep and set aside green bell pepper: cored, deseeded & chopped
  4. Prep and set aside garlic clove: crushed
  5. Prep and set aside dark chocolate: coarsely chopped
  6. Pre-heat - 180°C
  7. Get a clean Dutch oven
  8. Add vegetable oil
  9. Heat - high heat
  10. Add prepared whole chicken
  11. Sear evenly until light golden - high heat
  12. Transfer content of Dutch oven to plate then set aside
  13. Get Dutch oven
  14. Add prepared onion
  15. Add prepared green bell pepper
  16. Fry gently until softened - 4 min
  17. Add allspice
  18. Add ground cinnamon
  19. Add ground cumin
  20. Add chili powder
  21. Add prepared garlic clove
  22. Fry while stirring occasionally - approx 1 min
  23. Add canned chopped tomatoes
  24. Add chicken stock
  25. Heat until boiling
  26. Transfer chicken to Dutch oven and cover
  27. Cook - 45 min, 180°C
  28. Get a clean food processor bowl
  29. Add flour tortilla
  30. Add blanched almonds
  31. Add sesame seeds
  32. Blend until fine
  33. Pour chicken stock
  34. Blend until smooth
  35. Transfer mixture to Dutch oven
  36. Add prepared dark chocolate
  37. Stir
  38. Cook until tender - 30 min, 180°C
  39. Season with salt & pepper to taste
  40. Garnish with cilantro
  41. Serve
