Step preview

  1. Prep and set aside butter: cold & cubed
  2. Prep and set aside onion: finely sliced
  3. Prep and set aside anchovies: drained
  4. Pre-heat - 180°C
  5. Get a clean food processor bowl
  6. Add all purpose flour
  7. Add prepared butter
  8. Add egg
  9. Add egg yolk
  10. Blend until dough forms
  11. Transfer content of food processor bowl to work surface
  12. Knead
  13. Wrap with plastic wrap
  14. Chill in fridge - 1 hr
  15. Roll out on lightly-floured surface until 1/4" thick
  16. Press dough into tart pan
  17. Trim
  18. Chill in fridge - 1 hr
  19. Line with parchment paper
  20. Fill with pie weights
  21. Bake until light golden - 12 min, 180°C
  22. Remove with parchment paper
  23. Remove pie weights
  24. Bake - 2 min, 180°C
  25. Remove and let cool
  26. Get a clean frying pan
  27. Heat butter
  28. Heat olive oil
  29. Add prepared onion
  30. Add fresh thyme
  31. Fry in frying pan until golden brown - 20 min, low heat
  32. Remove
  33. Spread onion mixture with pastry
  34. Get a clean medium bowl
  35. Add egg
  36. Add milk
  37. Add double cream
  38. Season with salt & pepper
  39. Whisk until well combined
  40. Transfer egg mixture to pastry
  41. Bake until just set - 10 min, 180°C
  42. Arrange finely sliced tomato
  43. Arrange prepared anchovies
  44. Cook until set - 12 min, 180°C
  45. Let cool on round wire rack - 5 min
  46. Serve
