This simple spring pasta dish will keep the whole family happy. Mint adds freshness to the creamy sauce. Broad beans are also known as fava beans in some areas.

  1. Prep and set aside asparagus: trimmed & sliced
  2. Pre-heat - high heat
  3. Get a clean large saucepan
  4. Add water
  5. Add salt
  6. Boil
  7. Add penne
  8. Cook until al dente
  9. Get a clean baking sheet
  10. Add prepared asparagus
  11. Brush with olive oil
  12. Season with salt & pepper
  13. Broil in broiler - approx 8 min, high heat
  14. Get a clean saucepan
  15. Add water
  16. Add salt
  17. Boil
  18. Add fresh broad beans
  19. Cook - 2 min, high heat
  20. Drain
  21. Drain pasta
  22. Add double cream
  23. Transfer beans to pasta
  24. Transfer roasted vegetables to pasta
  25. Add grated parmesan cheese
  26. Add mint
  27. Season to taste
  28. Serve
