Step preview

  1. Add fresh chili, ginger, garlic clove, muscovado sugar and soy sauce to a clean food processor bowl
  2. Blend until combined
  3. Add tofu to a clean cutting board
  4. Pat dry with paper towels
  5. Cut evenly
  6. Transfer tofu to large glass bowl
  7. Transfer marinade to tofu and cover
  8. Marinate in fridge - 1 hr 30 min
  9. Add vegetable oil to a clean frying pan
  10. Heat - high heat
  11. Transfer tofu to frying pan
  12. Sauté until browned - 5 min, high heat
  13. Transfer content of frying pan to plate
  14. Add vegetable oil, scallion and baby corn to the frying pan
  15. Fry until lightly browned - 4 min, high heat
  16. Add chinese cabbage to the frying pan
  17. Fry - 2 min, high heat
  18. Add long grain rice to the frying pan
  19. Fry until heated through - 5 min
  20. Drizzle with soy sauce
  21. Stir tofu into frying pan
  22. Scatter cilantro over the frying pan
  23. Heat in frying pan - 1 min
  24. Serve immediately
