  1. Prep and set aside beef filet: cubed
  2. Prep and set aside onion: sliced
  3. Prep and set aside carrot: sliced
  4. Prep and set aside celery stalk: sliced
  5. Prep and set aside baguette: sliced
  6. Get a clean Dutch oven
  7. Add olive oil
  8. Heat - high heat
  9. Add prepared beef filet
  10. Cook until golden brown - 3 min, high heat
  11. Transfer content of Dutch oven to plate
  12. Get Dutch oven
  13. Add olive oil
  14. Add prepared onion
  15. Add prepared carrot
  16. Add prepared celery stalk
  17. Cook until softened - 5 min, high heat
  18. Add tomato purée
  19. Add all purpose flour
  20. Add dried thyme
  21. Add red wine
  22. Cook gently until thickened while stirring occasionally - 3 min
  23. Add beef stock
  24. Simmer - 15 min
  25. Transfer meat to Dutch oven
  26. Season with salt & pepper
  27. Prepare a clean work surface
  28. Add prepared baguette
  29. Rub in garlic clove
  30. Arrange bread in Dutch oven
  31. Broil in broiler until light golden - 3 min, high heat
  32. Serve
