  1. Prep and set aside onion: chopped
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside canned mixed beans: drained
  4. Get a clean large saucepan
  5. Heat olive oil
  6. Add prepared onion
  7. Add prepared garlic clove
  8. Cook gently until softened - 4 min, medium heat
  9. Add ground coriander
  10. Add prepared canned mixed beans
  11. Cook - 1 min, medium heat
  12. Add coconut milk
  13. Add vegetable stock
  14. Heat until just boiling and cover - high heat
  15. Simmer - 10 min, low heat
  16. Add spinach
  17. Cook while stirring occasionally - 5 min
  18. Transfer mixture to food processor bowl
  19. Blitz until smooth
  20. Ladle soup into 4 large serving bowls
  21. Serve immediately
