  1. Prep and set aside onion: chopped
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside canned mixed beans: drained
  4. Get a clean large saucepan
  5. Heat olive oil
  6. Add prepared onion
  7. Add prepared garlic clove
  8. Cook gently for 4min on medium heat until softened
  9. Add ground coriander
  10. Add prepared canned mixed beans
  11. Cook for 1min on medium heat
  12. Add coconut milk
  13. Add vegetable stock
  14. Heat on high heat until just boiling and cover
  15. Simmer for 10min on low heat
  16. Add spinach
  17. Cook for 5min while stirring occasionally
  18. Transfer mixture to food processor bowl
  19. Blitz until smooth
  20. Ladle soup into 4 large serving bowls
  21. Serve immediately
