Step preview

  1. Heat olive oil to a clean large saucepan
  2. Add onion and garlic clove to the large saucepan
  3. Cook gently until softened - 4 min, medium heat
  4. Add ground coriander and canned mixed beans to the mixture
  5. Cook - 1 min, medium heat
  6. Add coconut milk and vegetable stock to the mixture
  7. Heat until just boiling and cover - high heat
  8. Simmer - 10 min, low heat
  9. Add spinach to the mixture
  10. Cook while stirring occasionally - 5 min
  11. Transfer mixture to food processor bowl
  12. Blitz until smooth
  13. Ladle soup into 4 large serving bowls
  14. Serve immediately
