Step preview

  1. Pre-heat - 220°C
  2. Add light brown sugar and water to a clean frying pan
  3. Heat in frying pan until caramelized
  4. Add butter to the caramel carefully
  5. Lay out puff pastry a clean work surface
  6. Cut out
  7. Transfer pastry to baking sheet
  8. Arrange banana in the pastry
  9. Spoon three quarters of caramel into pastry
  10. Bake until just cooked - 15 min, 220°C
  11. Drizzle pastry with caramel
  12. Serve
