Step preview

  1. Heat olive oil to a clean frying pan
  2. Add asparagus to the frying pan
  3. Fry gently in frying pan - 5 min
  4. Transfer content of frying pan to plate
  5. Add olive oil, baby potato and onion to the frying pan
  6. Cook gently in frying pan until tender - 15 min
  7. Add egg, fresh basil and salt & pepper to a clean medium bowl
  8. Beat until well combined
  9. Transfer vegetables to frying pan
  10. Mix evenly
  11. Transfer egg mixture to frying pan
  12. Reduce - low heat
  13. Cover with foil
  14. Cook in frying pan until just set - 10 min
  15. Flip
  16. Cook in frying pan until firm - 3 min
  17. Serve
