  1. Prep and set aside asparagus: broken up
  2. Prep and set aside baby potato: finely sliced
  3. Prep and set aside onion: chopped
  4. Prep and set aside fresh basil: shredded
  5. Get a clean frying pan
  6. Heat olive oil
  7. Add prepared asparagus
  8. Fry gently in frying pan for 5min
  9. Transfer content of frying pan to plate
  10. Retrieve frying pan
  11. Add olive oil
  12. Add prepared baby potato
  13. Add prepared onion
  14. Cook gently in frying pan for 15min until tender
  15. Get a clean medium bowl
  16. Add egg
  17. Add prepared fresh basil
  18. Add salt & pepper
  19. Beat until well combined
  20. Transfer vegetables to frying pan
  21. Mix evenly
  22. Transfer egg mixture to frying pan
  23. Reduce on low heat
  24. Cover with foil
  25. Cook in frying pan for 10min until just set
  26. Flip
  27. Cook in frying pan for 3min until firm
  28. Serve
