  1. Prep and set aside fresh chili: deseeded & finely chopped
  2. Prep and set aside ginger: chopped
  3. Prep and set aside garlic clove: peeled
  4. Get a clean large saucepan
  5. Add water
  6. Add salt
  7. Boil
  8. Add soba noodles
  9. Cook for 5min until al dente
  10. Drain
  11. Return
  12. Get a clean food processor bowl
  13. Add coarsely chopped lemongrass stalk
  14. Add prepared fresh chili
  15. Add lime zest
  16. Add lime juice
  17. Add cilantro
  18. Add fresh basil
  19. Add prepared ginger
  20. Add prepared garlic clove
  21. Add peanuts
  22. Blend until mixture comes together
  23. Scrape
  24. Add peanut oil while machine is running
  25. Add fish sauce while machine is running
  26. Stir sauce into noodles
  27. Transfer noodles to 4 large serving bowls
  28. Garnish with lime
  29. Serve immediately
