Step preview

  1. Add water and salt to a clean large saucepan
  2. Boil
  3. Add soba noodles to the noodles
  4. Cook until al dente - 5 min
  5. Drain
  6. Return
  7. Add lemongrass stalk, fresh chili, lime zest, lime juice, cilantro, fresh basil, ginger, garlic clove and peanuts to a clean food processor bowl
  8. Blend until mixture comes together
  9. Scrape
  10. Add peanut oil and fish sauce to the sauce while machine is running
  11. Stir sauce into noodles
  12. Transfer noodles to 4 large serving bowls
  13. Garnish with lime
  14. Serve immediately
