Step preview

  1. Prep and set aside garlic clove: crushed
  2. Prep and set aside lemongrass stalk: finely chopped
  3. Prep and set aside ginger: grated
  4. Prep and set aside cilantro: chopped
  5. Prep and set aside fresh chili: deseeded & finely chopped
  6. Pre-heat - 200°C
  7. Get a clean food processor bowl
  8. Add prepared garlic clove
  9. Add prepared lemongrass stalk
  10. Add prepared ginger
  11. Add prepared cilantro
  12. Add prepared fresh chili
  13. Add salt
  14. Blend until thickened
  15. Add ground lamb
  16. Blend until completely mixed
  17. Transfer content of food processor bowl to work surface
  18. Shape into rounds
  19. Get a clean medium roasting dish
  20. Sprinkle with olive oil
  21. Transfer patties to medium roasting dish
  22. Cook until just cooked - 25 min, 200°C
  23. Get a clean cutting board
  24. Add cucumber
  25. Peel
  26. Scoop with teaspoon
  27. Cut into strips
  28. Add scallion
  29. Slice into strips
  30. Add pak choi
  31. Shred
  32. Drain meat
  33. Add vegetables to meat
  34. Cook - 5 min, 200°C
  35. Get a clean small bowl
  36. Add muscovado sugar
  37. Add lime zest
  38. Add lime juice
  39. Add fish sauce
  40. Mix until combined
  41. Get medium roasting dish
  42. Scatter peanuts
  43. Transfer half of dressing to meat
  44. Toss with slotted spoon
  45. Serve
