Burgers with a twist! This simple meal combines fragrantly spiced lamb with Asian greens, cooling cucumber and a sweet and tangy dressing.

Step preview

  1. Pre-heat oven - 200°C
  2. Add garlic clove, lemongrass stalk, ginger, cilantro, fresh chili and salt to a clean food processor bowl
  3. Blend until thickened
  4. Add ground lamb to the food processor bowl
  5. Blend until completely mixed
  6. Transfer content of food processor bowl to work surface
  7. Shape into rounds
  8. Sprinkle a clean medium roasting dish with olive oil
  9. Transfer patties to medium roasting dish
  10. Cook until just cooked - 25 min, 200°C
  11. Add cucumber to a clean cutting board
  12. Peel
  13. Scoop with teaspoon
  14. Cut into strips
  15. Add scallion to the vegetables
  16. Slice into strips
  17. Add pak choi to the vegetables
  18. Shred
  19. Drain meat
  20. Add vegetables to meat
  21. Cook - 5 min, 200°C
  22. Add muscovado sugar, lime zest, lime juice and fish sauce to a clean small bowl
  23. Mix until combined
  24. Scatter peanuts over the meat
  25. Transfer half of dressing to meat
  26. Toss with slotted spoon
  27. Serve
