  1. Prep and set aside flank steak: cubed
  2. Prep and set aside celery stalk: sliced
  3. Prep and set aside red bell pepper: cored, deseeded & coarsely chopped
  4. Prep and set aside sugar snap peas: halved
  5. Prep and set aside scallion: sliced
  6. Pre-heat
  7. Get a clean frying pan
  8. Heat frying oil
  9. Add prepared flank steak bit by bit
  10. Fry in frying pan until lightly browned
  11. Transfer content of frying pan to ceramic baking dish
  12. Retrieve frying pan
  13. Add frying oil
  14. Add prepared celery stalk
  15. Add prepared red bell pepper
  16. Fry in frying pan until softened
  17. Transfer content of frying pan to ceramic baking dish
  18. Add vegetable stock
  19. Add dark soy sauce
  20. Add ginger
  21. Add dried chilies
  22. Stir gently
  23. Cover with foil
  24. Cook for 50min until tender
  25. Get a clean small bowl
  26. Add cornflour
  27. Add water
  28. Whisk until combined
  29. Transfer mixture to beef
  30. Add prepared sugar snap peas
  31. Add prepared scallion
  32. Cover with foil
  33. Cook for 10min
  34. Serve immediately
