Step preview

  1. Add duck breast to a clean work surface
  2. Season with chinese five spice
  3. Pre-heat - high heat
  4. Transfer meat to frying pan
  5. Fry skin side down in frying pan until browned
  6. Turn
  7. Add lemongrass stalk, garlic clove, shallot, dried shiitake mushrooms, ginger and chicken stock to the frying pan
  8. Simmer in frying pan to simmer - 1 hr 30 min, low heat
  9. Remove
  10. Add goji berries, dried mushrooms and fish sauce to the frying pan
  11. Season with salt & pepper to taste
  12. Boil in frying pan until thickened while stirring occasionally
  13. Return
  14. Add cornflour and water to a clean small bowl
  15. Mix with teaspoon until thick
  16. Transfer mixture to frying pan
  17. Simmer in frying pan - 30 min, low heat
  18. Add scallion to the frying pan
  19. Garnish with cilantro
