Step preview

  1. Prep and set aside lemongrass stalk: crushed
  2. Prep and set aside shallot: crushed
  3. Prep and set aside ginger: peeled & finely sliced
  4. Prep and set aside scallion: quartered
  5. Prepare a clean work surface
  6. Add duck breast
  7. Season with chinese five spice
  8. Pre-heat - high heat
  9. Transfer meat to frying pan
  10. Fry skin side down in frying pan until browned
  11. Turn
  12. Add prepared lemongrass stalk
  13. Add crushed garlic clove
  14. Add prepared shallot
  15. Add soaked dried shiitake mushrooms
  16. Add prepared ginger
  17. Add chicken stock
  18. Simmer in frying pan to simmer - 1 hr 30 min, low heat
  19. Remove
  20. Add goji berries
  21. Add dried mushrooms
  22. Add fish sauce
  23. Season with salt & pepper to taste
  24. Boil in frying pan until thickened while stirring occasionally
  25. Return
  26. Get a clean small bowl
  27. Add cornflour
  28. Add water
  29. Mix with teaspoon until thick
  30. Transfer mixture to frying pan
  31. Simmer in frying pan - 30 min, low heat
  32. Add prepared scallion
  33. Garnish with cilantro
