Method
1. Pre-heat oven - 171°C
2. Grease a clean muffin pan
3. Add salted butter, brown sugar, molasses and milk to a clean saucepan
4. Heat gently until sugar has dissolved
5. Remove from the heat and pour to the large mixing bowl
6. Mix in baking soda until combined
7. Leave to rest for 10 min
8. Add egg and whisk until smooth
9. Add all purpose flour, pumpkin pie spice, ground ginger and ginger
10. Whisk until smooth
11. Transfer batter to muffin pan
12. Bake until skewer tests clean - 25 min, 171°C
13. Let cool - 5 min
14. Turn out onto cooling rack
15. Garnish
