Method
1. Pre-heat oven - 160°C
2. Line a clean baking tray with parchment paper
3. Place speck or bacon onto a lined baking tray and dust liberally with the paprika
4. Bake 30 minutes until very crisp. Cool
5. Place eggs into simmering basket and insert into Thermomix bowl
6. Add water to the TM5 bowl
7. Steam for 15 min, 100°C, speed 4
8. Remove from basket, drain bowl, cool and peel eggs
9. Add scallion, fresh parsley and garlic clove to the TM5 bowl
10. Chop with MC in place 3 sec, speed 5
11. Add peeled eggs, some of the bacon, in pieces
12. Blend with MC in place 10 sec, speed 8
13. Scrape down sides of TM5 bowl
14. Add crème fraîche to the TM5 bowl
15. Blend with MC in place 10 sec, speed 10
16. Then season with salt & pepper
17. Garnish with remaining pieces of bacon and serve
