Step preview

  1. Prep and set aside ricotta cheese: drained
  2. Prep and set aside pine nuts: toasted
  3. Pre-heat - 200°C
  4. Line 2 clean baking sheets with parchment paper
  5. Prepare a clean work surface
  6. Arrange puff pastry
  7. Brush with beaten egg
  8. Fit the TM5 bowl to TM5
  9. Add cubed parmesan cheese
  10. Blend - approx 10 sec, speed 10
  11. Add one quarter of filling to pastry
  12. Fold
  13. Brush with beaten egg
  14. Cut into rounds
  15. Transfer pastry to 2 baking sheets
  16. Bake until light golden and let cool - 15 min, 200°C
  17. Add prepared ricotta cheese to the filling
  18. Add sea salt
  19. Add black pepper
  20. Blend - approx 10 sec, speed 7
  21. Push pastry firmly
  22. Transfer filling to 2 pastry
  23. Spread
  24. Arrange cherry tomatoes
  25. Garnish with fresh basil
  26. Sprinkle with prepared pine nuts
  27. Serve
