Step preview

  1. Pre-heat oven - 200°C
  2. Line 2 clean baking sheets with parchment paper
  3. Arrange puff pastry in a clean work surface
  4. Brush with egg
  5. Add parmesan cheese to the TM5 bowl
  6. Fit TM5 bowl to TM5
  7. Blend - approx 10 sec, speed 10
  8. Add one quarter of filling to pastry
  9. Fold
  10. Brush with egg
  11. Cut into rounds
  12. Transfer pastry to 2 baking sheets
  13. Bake until light golden and let cool - 15 min, 200°C
  14. Add ricotta cheese, sea salt and black pepper to the filling
  15. Blend - approx 10 sec, speed 7
  16. Push pastry firmly
  17. Transfer filling to 2 pastry
  18. Spread
  19. Arrange cherry tomatoes in the pastry
  20. Garnish with fresh basil
  21. Sprinkle with pine nuts
  22. Serve
