Step preview

  1. Prep and set aside ricotta cheese: drained
  2. Prep and set aside pine nuts: toasted
  3. Pre-heat
  4. Line 2 baking sheets with parchment paper
  5. Prepare a clean work surface
  6. Arrange puff pastry
  7. Brush with beaten egg
  8. Fit the TM5 bowl to TM5
  9. Add cubed parmesan cheese
  10. Blend for approx 10s
  11. Add one quarter of filling to pastry
  12. Fold
  13. Brush with beaten egg
  14. Cut into rounds
  15. Transfer pastry to 2 baking sheets
  16. Bake for 15min until light golden and let cool
  17. Retrieve TM5 bowl
  18. Add prepared ricotta cheese
  19. Add sea salt
  20. Add black pepper
  21. Blend for approx 10s
  22. Push pastry firmly
  23. Transfer filling to 2 baking sheets
  24. Spread
  25. Arrange cherry tomatoes
  26. Garnish with fresh basil
  27. Sprinkle with prepared pine nuts
  28. Serve
