Christmas wouldn't be complete without a Pavlova, topped with cream and berries. Make the cream a salted caramel cream and you're onto a real winner!

Step preview

  1. Pre-heat - 150°C
  2. Line a clean baking sheet with parchment paper then set aside
  3. Fit the TM5 bowl to TM5
  4. Add egg white
  5. Add cream of tartar
  6. Whisk - approx 5 min, 37°C, speed 3
  7. Add golden caster sugar bit by bit while blending
  8. Whisk - approx 6 min, 37°C, speed 3
  9. Scrape occasionally
  10. Add cornflour
  11. Add white wine vinegar
  12. Add vanilla bean paste
  13. Whisk - approx 1 min, 37°C, speed 3
  14. Transfer content of TM5 bowl to baking sheet gently
  15. Shape into a circle
  16. Reduce - 120°C
  17. Bake - 1 hr 20 min
  18. Let cool - 3 hr
  19. Spread with whipped cream generously
  20. Arrange mixed berries
  21. Serve
