Merry Christmas Pavlova with Fresh Berries

Christmas wouldn't be complete without a Pavlova, topped with cream and berries. Make the cream a salted caramel cream and you're onto a real winner!

Step preview

  1. Pre-heat oven - 150°C
  2. Line a clean baking sheet with parchment paper then set aside
  3. Add egg white and cream of tartar to the TM5 bowl
  4. Fit TM5 bowl to TM5
  5. Whisk - approx 5 min, 37°C, speed 3
  6. Add golden caster sugar to the TM5 bowl bit by bit while blending
  7. Whisk - approx 6 min, 37°C, speed 3
  8. Scrape occasionally
  9. Add cornflour, white wine vinegar and vanilla bean paste to the TM5 bowl
  10. Whisk - approx 1 min, 37°C, speed 3
  11. Transfer content of TM5 bowl to baking sheet gently
  12. Shape into a circle
  13. Reduce - 120°C
  14. Bake - 1 hr 20 min
  15. Let cool - 3 hr
  16. Spread with whipped cream generously
  17. Arrange mixed berries in the baking sheet
  18. Serve
