Christmas wouldn't be complete without a Pavlova, topped with cream and berries. Make the cream a salted caramel cream and you're onto a real winner!

  • Egg white icon

    230 g (about 7 ⅔)

  • Cream of tartar icon

    1 teaspoon (about 3.05 g)

  • Golden caster sugar icon

    330 g (about 1 ½ cups)

  • Cornflour icon

    1 tablespoon (about 7.95 g)

  • White wine vinegar icon

    2 teaspoons (about 10 g)

  • Vanilla bean paste icon
    Vanilla bean paste

    1 teaspoon (about 5.5 g)

  • Whipped cream icon
    Whipped cream

  • Mixed berries icon

    METHOD


  • 1. Pre-heat oven - 150°C
  • 2. Line a clean baking sheet with parchment paper then set aside
  • 3. Add egg white and cream of tartar to the TM5 bowl
  • 4. Fit TM5 bowl to TM5
  • 5. Whisk - approx 5 min, 37°C, speed 3
  • 6. Add golden caster sugar to the TM5 bowl bit by bit while blending
  • 7. Whisk - approx 6 min, 37°C, speed 3
  • 8. Scrape occasionally
  • 9. Add cornflour, white wine vinegar and vanilla bean paste to the TM5 bowl
  • 10. Whisk - approx 1 min, 37°C, speed 3
  • 11. Transfer content of TM5 bowl to baking sheet gently
  • 12. Shape into a circle
  • 13. Reduce - 120°C
  • 14. Bake - 1 hr 20 min
  • 15. Let cool - 3 hr
  • 16. Spread with whipped cream generously
  • 17. Arrange mixed berries in the baking sheet
  • 18. Serve
