The very best Thermomix lemon butter you will ever find. You can use this butter in loads of my baking recipes, and in plenty of other ways, to add a lovely lemon flavor to whatever you're cooking.
Ingredients
Lemon3zest of
Butter250 gcubed
Golden caster sugar220 g
Lemon juice200 gfreshly squeezed
Egg4
Egg yolk2
Lemon essential oilas needed
Method
1. Add golden caster sugar and lemon zest to the TM5 bowl
2. Mix with MC on - 10 sec, speed 10
3. Add butter
4. Chop with MC on - 5 sec, speed 7
5. Then add lemon juice, eggs, egg yolks and 5 drops lemon essential oil (optional) to the butter
6. Cook - 10 min, 80°C, speed 5
7. Cook - 2 min, 90°C, speed 6
8. Sterilize clean jars
9. Transfer butter to jars and seal
10. This will keep for at least 6 weeks in the fridge
