Step preview

  1. Pre-heat - 190°C
  2. Line a clean muffin pan
  3. Get a clean medium roasting dish
  4. Place red bell pepper
  5. Drizzle with olive oil
  6. Season with salt & pepper generously
  7. Roast - 15 min, 190°C
  8. Get a clean large mixing bowl
  9. Add all purpose flour
  10. Add baking powder
  11. Add salt
  12. Add finely chopped fresh rosemary
  13. Season to taste
  14. Whisk briefly and set aside
  15. Get a clean medium bowl
  16. Add egg
  17. Add buttermilk
  18. Add sunflower oil
  19. Whisk until combined
  20. Transfer wet ingredients to batter
  21. Fold gently until combined
  22. Add grated parmesan cheese
  23. Add crumbled hard goat cheese
  24. Transfer roasted vegetables to batter
  25. Fold gently until combined
  26. Spoon batter into muffin pan
  27. Sprinkle with finely chopped walnuts
  28. Bake until skewer tests clean - 18 min, 190°C
