This muffin recipe is incredibly easy and is ripe for substituting your favorite mix-ins and spices. Dried figs and walnuts? Berries and orange zest? Go for it!

    Method

  • 1. Pre-heat oven - 199°C
  • 2. Line a clean muffin pan with paper muffin cups
  • 3. Add egg, granulated sugar, milk and sunflower oil to a clean large mixing bowl
  • 4. Whisk briefly
  • 5. Add all purpose flour, baking powder, salt, ground cloves and ground cinnamon
  • 6. Fold gently until just combined
  • 7. Add plum to the batter
  • 8. Mix gently
  • 9. Spoon batter into muffin pan
  • 10. Bake until skewer tests clean - 18 min, 199°C
  • 11. Transfer onto cooling rack
