    Method

  • 1. Add bread flour, quick-rise yeast, granulated sugar, sea salt, milk, vanilla extract and egg yolk to a clean stand mixer bowl
  • 2. Mix until smooth - medium speed
  • 3. Add bread flour and unsalted butter
  • 4. Mix until completely mixed and cover - medium speed
  • 5. Let rise until doubled - 1 hr
  • 6. In a clean frying pan heat unsalted butter until melted over medium-high heat
  • 7. Add apple, granulated sugar, ground cinnamon and sea salt and cook until syrupy for 10 min, medium heat
  • 8. Transfer dough to lightly floured surface and roll out
  • 9. Add cooled apples on top
  • 10. Fold halfway
  • 11. Chop as instructed below
  • 12. Form into a log
  • 13. Sprinkle with flour and cut again into 1inch thick slices
  • 14. Cover baking sheet parchment paper
  • 15. Transfer fritters to baking sheet
  • 16. Let rise until fluffy - approx 20 min
  • 17. In a clean medium bowl mix together powdered sugar, maple syrup and vanilla extract
  • 18. Add water, stir then set aside
  • 19. Add frying oil to a clean fryer and heat a to - 175°C, medium-high heat
  • 20. Add fritters and fry until golden brown and let cool - 175°C, medium-high heat
  • 21. Dip in the glaze and let cool
