Method
1. Add bread flour, quick-rise yeast, granulated sugar, sea salt, milk, vanilla extract and egg yolk to a clean stand mixer bowl
2. Mix until smooth - medium speed
3. Add bread flour and unsalted butter
4. Mix until completely mixed and cover - medium speed
5. Let rise until doubled - 1 hr
6. In a clean frying pan heat unsalted butter until melted over medium-high heat
7. Add apple, granulated sugar, ground cinnamon and sea salt and cook until syrupy for 10 min, medium heat
8. Transfer dough to lightly floured surface and roll out
9. Add cooled apples on top
10. Fold halfway
11. Chop as instructed below
12. Form into a log
13. Sprinkle with flour and cut again into 1inch thick slices
14. Cover baking sheet parchment paper
15. Transfer fritters to baking sheet
16. Let rise until fluffy - approx 20 min
17. In a clean medium bowl mix together powdered sugar, maple syrup and vanilla extract
18. Add water, stir then set aside
19. Add frying oil to a clean fryer and heat a to - 175°C, medium-high heat
20. Add fritters and fry until golden brown and let cool - 175°C, medium-high heat
21. Dip in the glaze and let cool
