Step preview

  1. Add bread flour, quick-rise yeast, granulated sugar, sea salt, milk, vanilla extract and egg yolk to a clean stand mixer bowl
  2. Mix until smooth - medium speed
  3. Add bread flour and unsalted butter to the dough
  4. Mix until completely mixed and cover - medium speed
  5. Let rise until doubled - 1 hr
  6. Add unsalted butter to a clean frying pan
  7. Heat until melted - medium-high heat
  8. Add apple, granulated sugar, ground cinnamon and sea salt to the frying pan
  9. Cook until syrupy and let cool - approx 10 min, medium heat
  10. Transfer dough to lightly floured surface
  11. Roll out
  12. Transfer content of frying pan to dough
  13. Fold halfway
  14. Chop
  15. Form into a log
  16. Flour
  17. Cut until 1" thick
  18. Cover with parchment paper
  19. Transfer dough to baking sheet
  20. Let rise until fluffy - approx 20 min
  21. Add powdered sugar, maple syrup and vanilla extract to a clean medium bowl
  22. Stir until smooth
  23. Add water to the medium bowl
  24. Stir then set aside
  25. Add frying oil to a clean fryer
  26. Heat - 175°C, medium-high heat
  27. Transfer content of baking sheet to fryer
  28. Fry until golden brown and let cool - 175°C, medium-high heat
  29. Dip and let cool
