Step preview

  1. Prep and set aside milk: warm
  2. Prep and set aside unsalted butter: room temperature
  3. Prep and set aside apple: peeled, cored & cubed - 1 cm
  4. Prep and set aside water: warm
  5. Get a clean stand mixer bowl
  6. Add bread flour
  7. Add quick-rise yeast
  8. Add granulated sugar
  9. Add sea salt
  10. Add prepared milk
  11. Add vanilla extract
  12. Add egg yolk
  13. Mix until smooth - medium speed
  14. Add bread flour
  15. Add prepared unsalted butter
  16. Mix until completely mixed and cover - medium speed
  17. Let rise until doubled - 1 hr
  18. Get a clean frying pan
  19. Add unsalted butter
  20. Heat until melted - medium-high heat
  21. Add prepared apple
  22. Add granulated sugar
  23. Add ground cinnamon
  24. Add sea salt
  25. Cook until syrupy and let cool - approx 10 min, medium heat
  26. Transfer dough to lightly floured surface
  27. Roll out
  28. Transfer content of frying pan to dough
  29. Fold halfway
  30. Chop
  31. Form into a log
  32. Flour
  33. Cut until 1" thick
  34. Cover with parchment paper
  35. Transfer dough to baking sheet
  36. Let rise until fluffy - approx 20 min
  37. Get a clean medium bowl
  38. Add sifted powdered sugar
  39. Add maple syrup
  40. Add vanilla extract
  41. Stir until smooth
  42. Add prepared water
  43. Stir then set aside
  44. Get a clean fryer
  45. Add frying oil
  46. Heat - 175°C, medium-high heat
  47. Transfer content of baking sheet to fryer
  48. Fry until golden brown and let cool - 175°C, medium-high heat
  49. Dip and let cool
