A very pretty jewel colored dessert with fragrant vanilla bean pastry. It is simple and so delicious. A really pretty addition to any meal. Your pastry will have a peppered look, which is a result of the vanilla bean. If you prefer not to have that look, use vanilla extract instead. It is a deliciously short pastry, and yes, we made it to Sunday before eating the pie, and eaten cold, the pastry was simply like eating a shortbread with a sweet but tangy filling.

Step preview

  1. Prep and set aside rhubarb: chopped
  2. Prep and set aside butter: cold & cubed
  3. Prep and set aside strawberries: hulled & halved
  4. Fit the TM5 bowl to TM5
  5. Add prepared rhubarb
  6. Add sugar
  7. Add vanilla bean
  8. Add cold water
  9. Cook - approx 12 min, 100°C, reverse gentle stir
  10. Remove
  11. Transfer content of TM5 bowl to medium bowl
  12. Let cool completely
  13. Add golden caster sugar to the TM5 bowl
  14. Add vanilla bean
  15. Mix - approx 10 sec, speed 10
  16. Add prepared butter
  17. Add all purpose flour
  18. Mix until crumbs form - approx 10 sec, speed 6
  19. Add cold water bit by bit
  20. Mix - dough
  21. Transfer content of TM5 bowl to lightly floured surface
  22. Divide
  23. Roll out
  24. Transfer half of dough to pie dish
  25. Freeze - 20 min
  26. Pre-heat - 190°C
  27. Transfer filling to pie dish
  28. Arrange prepared strawberries
  29. Roll out dough
  30. Place dough on pie dish
  31. Press
  32. Cut
  33. Bake until golden brown - 30 min, 190°C
  34. Transfer onto cooling rack
  35. Serve
