Step preview

  1. Prep and set aside pumpkin: roasted
  2. Pre-heat - 180°C
  3. Fit the TM5 bowl to TM5
  4. Add butter
  5. Add lemon zest
  6. Add dark brown sugar
  7. Heat - approx 3 min 30 sec, 37°C, speed 2
  8. Add vanilla bean paste
  9. Add ground cinnamon
  10. Add ground ginger
  11. Add all purpose flour
  12. Add sea salt
  13. Add almonds
  14. Add pecan pieces
  15. Blend - approx 15 sec, speed 6
  16. Press content of TM5 bowl into springform pan
  17. Bake until light golden - 18 min, 180°C
  18. Let cool
  19. Get a clean baking dish
  20. Add vanilla bean
  21. Bake until crispy - 15 min, 200°C
  22. Transfer content of baking dish to TM5 bowl
  23. Add sugar
  24. Blend - approx 10 sec, speed 10
  25. Add prepared pumpkin
  26. Add ground ginger
  27. Add ground cinnamon
  28. Add nutmeg
  29. Add allspice
  30. Add vanilla bean paste
  31. Add cream cheese
  32. Add egg
  33. Blend - approx 20 sec, speed 7
  34. Scrape down sides of TM5 bowl
  35. Transfer content of TM5 bowl to springform pan
  36. Add water to the TM5 bowl
  37. Steam springform pan - approx 1 hr, varoma, speed 3
  38. Bake until light golden - 20 min, 180°C
  39. Serve
  40. Top with whipped cream
