Step preview

  1. Pre-heat oven - 180°C
  2. Add butter, lemon zest and dark brown sugar to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Heat - approx 3 min 30 sec, 37°C, speed 2
  5. Then add vanilla bean paste, ground cinnamon, ground ginger, all purpose flour, sea salt, almonds and pecan pieces to the TM5 bowl
  6. Blend - approx 15 sec, speed 6
  7. Press content of TM5 bowl into springform pan
  8. Bake until light golden - 18 min, 180°C
  9. Let cool
  10. Add vanilla bean to a clean baking dish
  11. Bake until crispy - 15 min, 200°C
  12. Transfer content of baking dish to TM5 bowl
  13. Add sugar to the TM5 bowl
  14. Blend - approx 10 sec, speed 10
  15. Then add pumpkin, ground ginger, ground cinnamon, nutmeg, allspice, vanilla bean paste, cream cheese and egg to the TM5 bowl
  16. Blend - approx 20 sec, speed 7
  17. Scrape down sides of TM5 bowl
  18. Transfer content of TM5 bowl to springform pan
  19. Add water to the TM5 bowl
  20. Steam springform pan - approx 1 hr, varoma, speed 3
  21. Bake until light golden - 20 min, 180°C
  22. Serve
  23. Top with whipped cream
