Step preview

  1. Get a clean saucepan
  2. Add dark chocolate
  3. Heat slowly until completely melted
  4. Let cool slightly
  5. Fit the TM5 bowl to TM5
  6. Add golden caster sugar
  7. Add egg
  8. Add vanilla bean paste
  9. Whisk - approx 5 min, 50°C, speed 4
  10. Transfer half of chocolate mixture to TM5 bowl
  11. Blend - approx 10 sec, speed 6
  12. Fold chocolate mixture into TM5 bowl
  13. Fold until glossy
  14. Transfer content of TM5 bowl to heatproof bowl
  15. Cool TM5 bowl in fridge
  16. Add cocoa powder
  17. Add whipping cream
  18. Whisk until peaks form - approx 30 sec, speed 4
  19. Fold content of TM5 bowl into chocolate mixture
  20. Transfer chocolate mixture to 8 ramekins
  21. Top with whipping cream
  22. Serve
