    50 g (about 3 ⅞ tbsp)

    1 tsp (about 5.5 g)

    20 g (about 3 ⅝ tbsp)

Step preview

  1. Add dark chocolate to a clean saucepan
  2. Heat slowly until completely melted
  3. Let cool slightly
  4. Add golden caster sugar, egg and vanilla bean paste to the TM5 bowl
  5. Fit TM5 bowl to TM5
  6. Whisk - approx 5 min, 50°C, speed 4
  7. Transfer half of chocolate mixture to TM5 bowl
  8. Blend - approx 10 sec, speed 6
  9. Fold chocolate mixture into TM5 bowl
  10. Fold until glossy
  11. Transfer content of TM5 bowl to heatproof bowl
  12. Cool TM5 bowl in fridge
  13. Add cocoa powder and whipping cream to the TM5 bowl
  14. Whisk until peaks form - approx 30 sec, speed 4
  15. Fold content of TM5 bowl into chocolate mixture
  16. Transfer chocolate mixture to 8 ramekins
  17. Top with whipping cream
  18. Serve
