Truly delicious little pots of decadence...treat with respect...then go to the gym as penance. Simple in the extreme but a little bit fancy.

Step preview

  1. Get a clean saucepan
  2. Add golden caster sugar
  3. Add water
  4. Add vanilla extract
  5. Cook until sugar has dissolved - medium-low heat
  6. Heat until boiling
  7. Stir constantly
  8. Boil until caramelized
  9. Pour caramel into baking sheet
  10. Let cool until hard
  11. Break into pieces
  12. Get the TM5 bowl
  13. Transfer caramel to TM5 bowl
  14. Add vanilla extract
  15. Add milk
  16. Add whipping cream
  17. Add egg yolk
  18. Fit TM5 bowl to TM5
  19. Cook - approx 8 min, 80°C, speed 4
  20. Cook - approx 2 min, 90°C, speed 4
  21. Transfer content of TM5 bowl to 4 jars
  22. Chill in fridge until set
  23. Serve
