I discovered this simple but delicious recipe whilst on holiday on the island of Hvar in Croatia. I used hake fillets but use any seafood you like. Serve with a glass of good white wine and some crusty bread. Sea view optional.

Step preview

  1. Add cod fillet to a clean cutting board
  2. Season with salt & pepper
  3. Add olive oil to a clean large saucepan
  4. Heat thoroughly
  5. Add onion and garlic clove to the large saucepan
  6. Cook while stirring occasionally - 5 min, medium-high heat
  7. Add tomato to the large saucepan
  8. Cook while stirring occasionally - 2 min
  9. Add salt & pepper to the large saucepan to taste
  10. Add potato, fresh parsley, lemon, white wine, white vinegar and vegetable stock to the large saucepan
  11. Simmer - 20 min
  12. Transfer fish to large saucepan carefully and cover
  13. Simmer gently - 10 min
  14. Serve carefully
  15. Garnish with fresh parsley
