I discovered this simple but delicious recipe whilst on holiday on the island of Hvar in Croatia. I used hake fillets but use any seafood you like. Serve with a glass of good white wine and some crusty bread. Sea view optional.

  1. Prep and set aside onion: peeled & chopped
  2. Prep and set aside garlic clove: peeled & chopped
  3. Prep and set aside tomato: chopped
  4. Prep and set aside potato: peeled & quartered
  5. Prep and set aside fresh parsley: chopped
  6. Prep and set aside lemon: juice of
  7. Get a clean cutting board
  8. Add cod fillet
  9. Season with salt & pepper
  10. Get a clean large saucepan
  11. Add olive oil
  12. Heat thoroughly
  13. Add prepared onion
  14. Add prepared garlic clove
  15. Cook while stirring occasionally - 5 min, medium-high heat
  16. Add prepared tomato
  17. Cook while stirring occasionally - 2 min
  18. Add salt & pepper to taste
  19. Add prepared potato
  20. Add prepared fresh parsley
  21. Add prepared lemon
  22. Add white wine
  23. Add white vinegar
  24. Add vegetable stock
  25. Simmer - 20 min
  26. Transfer fish to large saucepan carefully and cover
  27. Simmer gently - 10 min
  28. Serve carefully
  29. Garnish with fresh parsley
