These quinoa hash browns are a weekend ritual. They're made from grated potatoes and quinoa, cooked in a little butter and garnished with chopped green onions.

    Method

  • 1. Add quinoa and water to a clean saucepan
  • 2. Heat until boiling, simmer and set aside - 10 min
  • 3. Let cool completely, then transfer quinoa to large mixing bowl
  • 4. Add potato, egg, sea salt and black pepper
  • 5. Mix together until combined
  • 6. Melt unsalted butter in the large cast iron skillet
  • 7. Scoop hash brown mixture onto large cast iron skillet
  • 8. Flatten and fry the hash browns for 5-7 minutes on each side
  • 9. Serve
