  1. Prep and set aside clementine: peel & juice of
  2. Prep and set aside lime: peel
  3. Prep and set aside lemon: peel
  4. Prep and set aside cinnamon stick: halved
  5. Prep and set aside nutmeg: freshly ground
  6. Fit the TM5 bowl to TM5
  7. Add superfine sugar
  8. Add prepared clementine
  9. Add prepared lime
  10. Add prepared lemon
  11. Cook with MC in place - approx 5 min, 100°C, speed 1
  12. Add cloves
  13. Add prepared cinnamon stick
  14. Add bay leaves
  15. Add prepared nutmeg
  16. Add vanilla bean pod
  17. Add red wine
  18. Cook - approx 10 min, 100°C, speed 1
  19. Add red wine
  20. Add star anise pod
  21. Cook with MC in place - approx 5 min, 100°C, speed 1
  22. Strain liquid into jug
  23. Garnish with sliced lemon
  24. Garnish with cranberries
  25. Serve immediately
