Step preview

  1. Add unsalted butter to a clean small glass bowl
  2. Melt in microwave - low heat
  3. Add egg yolk, lemon and water to a clean medium glass bowl
  4. Whisk together
  5. Place in double boiler
  6. Whisk vigorously until thick
  7. Add content of small glass bowl to eggs slowly
  8. Season with salt & pepper
  9. Serve immediately
