Blueberries750 g
Granulated sugar200 g
Cornstarch30 g
Lemon5 gjuice of
All purpose flour120 g
Salt1 pinch
Unsalted butter120 gcold
Egg1
Buttermilk30 g
Method
1. Pre-heat oven - 170°C
2. Add blueberries, granulated sugar, cornstarch and lemon to a clean medium bowl
3. Mix together until combined
4. Transfer fruit to 8 ramekins
5. Add granulated sugar, all purpose flour and salt to a clean large mixing bowl
6. Whisk together
7. Add unsalted butter
8. Rub in hands until coarse crumbs form
9. Add egg to the batter
10. Mix in buttermilk to the batter until just combined
11. Drop batter into the ramekins
12. Bake - 25 min
13. Serve
