A very family friendly salad in that you can scale it up or down to meet the size of the crowd you are feeding. Everyone loves it!

    Method

  • 1. Add green beans and asparagus to the varoma dish
  • 2. Add egg to the simmering basket and insert into Thermomix bowl
  • 3. Add water to the TM bowl
  • 4. Cook - 5 min, 100°C, speed 2
  • 5. Set Varoma into position and steam 11 min, Varoma, speed 2
  • 6. Place the veggies straight into an ice bath so they keep their bright green colour
  • 7. Cool, peel and slice eggs
  • 8. Drain, clean and dry TM bowl
  • 9. Add mayonnaise, lime, pink Himalayan salt flakes, black pepper and avocado
  • 10. Blend with MC on - 20 sec, speed 7
  • 11. Place all salad ingredients onto a large platter
  • 12. Drizzle over salad and garnish with additional parsley leaves
