Step preview

  1. Prep and set aside onion: quartered
  2. Prep and set aside canned black beans: drained
  3. Prep and set aside canned chickpeas: drained
  4. Prep and set aside mozzarella cheese: grated
  5. Get a clean food processor bowl
  6. Add prepared onion
  7. Add egg
  8. Add prepared canned black beans
  9. Add prepared canned chickpeas
  10. Add chili powder
  11. Add salt
  12. Pulse until combined
  13. Transfer the rest of content of food processor bowl to large mixing bowl
  14. Add panko breadcrumbs
  15. Add prepared mozzarella cheese
  16. Add fresh parsley
  17. Fold until combined
  18. Split into eighths then set aside
  19. Get a clean frying pan
  20. Add frying oil
  21. Heat - medium-high heat
  22. Transfer half of content of large mixing bowl to frying pan
  23. Panfry until browned then set aside - approx 10 min, medium-high heat
  24. Transfer the rest of content of large mixing bowl to frying pan
  25. Panfry until browned then set aside - approx 10 min, medium-high heat
  26. Serve
