A simple, healthy and delicious vegetable side dish. Only 4 ingredients...plus salt and pepper! Would go great with chicken, pork or thanksgiving dinner.
Ingredients
Green beans455 gtrimmed
Lemon½juice of
Shallot1minced
Parmesan cheese50 ggrated
Olive oil1 tablespoon
Garlic clove3minced
Salt & pepperas needed
Method
1. Pre-heat oven - 200°C / 400°F
2. Place the green beans on a large baking sheet and drizzle with olive oil
3. Add the garlic, shallot, and lemon juice
4. Toss, using tongs or clean hands, until beans are well coated
5. Make sure the beans are in an even layer and season with salt and black pepper
6. Roast the green beans for 10-15 minutes, shaking the pan once halfway through, until the beans are tender, but still slightly crisp
7. Remove from the oven and sprinkle beans with Parmesan cheese, if using
8. Serve warm
