A very festive salad that looks so pretty and tastes absolutely divine. I do love a salad that is actually a meal and this is one of those salads. The dressing should really be it’s own recipe. It is that good. NO complaints if this is on your Christmas menu. Don’t be afraid of the the fruit...you’ll be amazed how good it is. You have been warned.

  1. Prep and set aside lemon: zest of & juice of
  2. Prep and set aside orange: zest of & juice of
  3. Prep and set aside chicken thighs: cubed
  4. Prep and set aside scallion: sliced
  5. Prep and set aside mango: peeled & diced
  6. Prep and set aside avocado: diced
  7. Prep and set aside strawberries: sliced
  8. Fit the TM5 bowl to TM5
  9. Add garlic clove
  10. Add fresh chili
  11. Add prepared lemon
  12. Add prepared orange
  13. Add extra virgin olive oil
  14. Add fish sauce
  15. Add mint
  16. Add cilantro
  17. Add rice wine vinegar
  18. Blend - approx 30 sec, speed 10
  19. Transfer content of TM5 bowl to small bowl
  20. Store in fridge
  21. Get the simmering basket
  22. Add white rice
  23. Add water
  24. Steam - approx 8 min, varoma, speed 3
  25. Get the varoma dish
  26. Add prepared chicken thighs
  27. Steam - approx 8 min, varoma, speed 3
  28. Drain rice
  29. Transfer rice to large serving bowl
  30. Pour one quarter of dressing into large serving bowl
  31. Arrange spinach
  32. Add prepared scallion
  33. Add prepared mango
  34. Add prepared avocado
  35. Add prepared strawberries
  36. Transfer half of dressing to large serving bowl
  37. Arrange chicken in large serving bowl
  38. Garnish with macadamia nuts
  39. Garnish with mint
  40. Serve
