A very festive salad that looks so pretty and tastes absolutely divine. I do love a salad that is actually a meal and this is one of those salads. The dressing should really be it’s own recipe. It is that good. NO complaints if this is on your Christmas menu. Don’t be afraid of the the’ll be amazed how good it is. You have been warned.

Step preview

  1. Add garlic clove, fresh chili, lemon, orange, extra virgin olive oil, fish sauce, mint, cilantro and rice wine vinegar to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Blend - approx 30 sec, speed 10
  4. Transfer content of TM5 bowl to small bowl
  5. Store in fridge
  6. Add white rice and water to the simmering basket
  7. Steam - approx 8 min, varoma, speed 3
  8. Add chicken thighs to the varoma dish
  9. Steam - approx 8 min, varoma, speed 3
  10. Drain rice
  11. Transfer rice to large serving bowl
  12. Pour one quarter of dressing into large serving bowl
  13. Arrange spinach in the large serving bowl
  14. Add scallion, mango, avocado and strawberries to the large serving bowl
  15. Transfer half of dressing to large serving bowl
  16. Arrange chicken in large serving bowl
  17. Garnish with macadamia nuts and mint
  18. Serve
