Step preview

  1. Prep and set aside mozzarella cheese: cubed
  2. Prep and set aside parmesan cheese: cubed
  3. Prep and set aside cherry tomatoes: halved
  4. Prep and set aside feta cheese: crumbled
  5. Pre-heat - 220°C
  6. Fit the TM5 bowl to TM5
  7. Add dried yeast
  8. Add water
  9. Heat - approx 2 min, speed 2
  10. Add bread flour
  11. Add chili flakes
  12. Add sea salt
  13. Add coconut sugar
  14. Add extra virgin olive oil
  15. Mix - approx 6 sec, speed 6
  16. Knead - approx 3 min, dough
  17. Transfer content of TM5 bowl to large mixing bowl
  18. Cover with kitchen towel until doubled - 15 min
  19. Add prepared mozzarella cheese to the TM5 bowl
  20. Add prepared parmesan cheese
  21. Add garlic clove
  22. Blend - approx 10 sec, speed 8
  23. Scrape down sides of TM5 bowl
  24. Blend - approx 10 sec, speed 8
  25. Scrape down sides of TM5 bowl
  26. Transfer content of TM5 bowl to medium bowl
  27. Transfer dough to work surface
  28. Divide into halves
  29. Shape into rectangles
  30. Spread with tomato paste
  31. Add dried oregano evenly
  32. Add dried basil evenly
  33. Add cheese mixture to work surface
  34. Add ground chicken into pieces
  35. Add baby spinach
  36. Add prepared cherry tomatoes
  37. Add prepared feta cheese
  38. Fold
  39. Cook - 25 min, 220°C
  40. Serve immediately
