This flat bread will serve loads of people with leftovers for lunch for days!! It is really delicious and you can change out the chicken with no issue.

Step preview

  1. Pre-heat oven - 220°C
  2. Add dried yeast and water to the TM5 bowl
  3. Fit TM5 bowl to TM5
  4. Heat - approx 2 min, speed 2
  5. Then add bread flour, chili flakes, sea salt, coconut sugar and extra virgin olive oil to the TM5 bowl
  6. Mix - approx 6 sec, speed 6
  7. Knead - approx 3 min, dough
  8. Transfer content of TM5 bowl to large mixing bowl
  9. Cover with kitchen towel until doubled - 15 min
  10. Add mozzarella cheese, parmesan cheese and garlic clove to the TM5 bowl
  11. Blend - approx 10 sec, speed 8
  12. Scrape down sides of TM5 bowl
  13. Blend - approx 10 sec, speed 8
  14. Scrape down sides of TM5 bowl
  15. Transfer content of TM5 bowl to medium bowl
  16. Transfer dough to work surface
  17. Divide into halves
  18. Shape into rectangles
  19. Spread with tomato paste
  20. Add dried oregano and dried basil to the work surface evenly
  21. Add cheese mixture to work surface
  22. Add ground chicken to the work surface into pieces
  23. Add baby spinach, cherry tomatoes and feta cheese to the work surface
  24. Fold
  25. Cook - 25 min, 220°C
  26. Serve immediately
