Step preview

  1. Prep and set aside water: warm
  2. Fit the TM5 bowl to TM5
  3. Add bread flour
  4. Add duck fat
  5. Add sea salt
  6. Blend - approx 6 sec, speed 6
  7. Add prepared water
  8. Knead - approx 1 min, dough
  9. Transfer content of TM5 bowl to work surface
  10. Knead until smooth
  11. Wrap with kitchen towel and let rise - approx 30 min
  12. Pre-heat a clean frying pan - medium heat
  13. Divide dough evenly into balls
  14. Roll into rounds
  15. Transfer dough to frying pan
  16. Fry one by one in frying pan until light golden
  17. Keep warm with kitchen towel
