Method
1. Add bread flour, duck fat and pink Himalayan salt flakes to the TM5 bowl
2. Blend with MC fitted - approx 6 sec, speed 6
3. Then add water to the TM5 bowl
4. Knead - approx 1 min, dough
5. Transfer content of TM5 bowl to work surface
6. Knead until smooth
7. Wrap with kitchen towel and let rise - approx 30 min
8. Pre-heat a clean frying pan without any oil - medium heat
9. Divide dough evenly into 12 balls
10. Roll each one into a large flat round
11. Transfer dough to frying pan
12. Fry one by one in frying pan until puffy and golden
13. Keep wrapped in a tea towel until ready to use, or freeze wrapped in foil and reheat in oven or on cook top before use
