Step preview

  1. Prep and set aside parmesan cheese: cubed
  2. Prep and set aside button mushroom: coarsely chopped
  3. Prep and set aside scallion: coarsely chopped
  4. Prep and set aside fresh parsley: coarsely chopped
  5. Prep and set aside red bell pepper: deseeded & coarsely chopped
  6. Prep and set aside cilantro: coarsely chopped
  7. Fit the TM5 bowl to TM5
  8. Add prepared parmesan cheese
  9. Add garlic clove
  10. Chop - approx 10 sec, speed 10
  11. Scrape down sides of TM5 bowl
  12. Add ricotta cheese
  13. Add sea salt
  14. Add black pepper
  15. Chop - approx 1 sec, speed 6
  16. Transfer content of TM5 bowl to small bowl
  17. Add prepared button mushroom to the TM5 bowl
  18. Add prepared scallion
  19. Add prepared fresh parsley
  20. Add prepared red bell pepper
  21. Add butter
  22. Blend - approx 2 sec, speed 4
  23. Scrape down sides of TM5 bowl
  24. Sauté - approx 5 min, varoma, speed 1
  25. Pre-heat a clean frying pan - medium heat
  26. Drizzle with extra virgin olive oil generously
  27. Prepare a clean work surface
  28. Add flour tortilla
  29. Transfer half of cheese mixture to tortillas
  30. Transfer content of TM5 bowl to tortillas
  31. Transfer cheese mixture to tortillas
  32. Fold and press down
  33. Transfer tortillas to frying pan
  34. Fry one by one in frying pan
  35. Slice into quarters
  36. Garnish with prepared cilantro
  37. Top with lime
  38. Serve
