Step preview

  1. Prep and set aside water: boiling
  2. Prep and set aside red onion: halved
  3. Prep and set aside lemongrass stalk: halved
  4. Prep and set aside cilantro: stalks of

  6. Pre-heat a clean frying pan
  7. Add coriander seeds
  8. Add cumin seeds
  9. Add cardamom pods
  10. Add star anise pod
  11. Roast in frying pan until fragrant - medium-high heat
  12. Cool slightly
  13. Transfer content of frying pan to TM5 bowl
  14. Add sea salt
  15. Fit TM5 bowl to TM5
  16. Chop - approx 20 sec, speed 10
  17. Get a clean small bowl
  18. Add dried chilies
  19. Add prepared water
  20. Soak - approx 10 min
  21. Add prepared red onion to the TM5 bowl
  22. Add fresh garlic
  23. Add ginger
  24. Add prepared lemongrass stalk
  25. Add water
  26. Transfer content of small bowl to TM5 bowl
  27. Add prepared cilantro
  28. Chop - approx 6 sec, speed 6
  29. Sauté - approx 10 min, varoma, speed 2
  30. Blend - approx 30 sec, speed 6
  31. Scrape down sides of TM5 bowl
  32. Add cubed leg of beef
  33. Add coconut cream
  34. Add fish sauce
  35. Add coconut sugar
  36. Add roasted peanuts
  37. Add prepared cilantro
  38. Cook - approx 45 min, 100°C, speed 1
  39. Transfer content of TM5 bowl to 6 large serving bowls
  40. Drizzle with coconut cream
  41. Drizzle with lime juice
  42. Garnish with roasted peanuts
  43. Serve
