The kids will love this flavourful Fisherman's Pie with creamy mash and cheese topping. Serve with a salad and you have an easy midweek meal.

    Method

  • 1. Add fresh parsley to the TM5 bowl
  • 2. Chop with MC in place - 3 sec, speed 6
  • 3. Remove from bowl and set aside
  • 4. Add cheddar cheese to the TM5 bowl
  • 5. Chop with MC in place - 3 sec, speed 7
  • 6. Remove from bowl and set aside
  • 7. Place sweet potatoes into simmering basket and insert into Thermomix bowl
  • 8. Pour water over
  • 9. Place spinach into steamer dish and set into position
  • 10. Cook for 20 min, Varoma, speed 4
  • 11. Remove the steamer tray with the spinach and set aside
  • 12. Remove and drain sweet potatoes, return them to Thermomix bowl and add butter, pink Himalayan salt flakes, black pepper and milk
  • 13. Mash with MC in place 10 sec/speed 6. Set aside
  • 14. Place onion and EVOO into clean, dry Thermomix bowl
  • 15. Chop for 4 sec, speed 4
  • 16. Then add carrot to the TM5 bowl
  • 17. Sauté for 4 min, Varoma, speed 1
  • 18. Then add mascarpone cheese, lemon, wholegrain mustard and nutmeg to the TM5 bowl
  • 19. Mix for 5 sec, reverse gentle stir
  • 20. Fold in tuna and peas with a spatula
  • 21. Preheat oven to 200ºC
  • 22. Butter a 20cm deep pie dish
  • 23. Pour tuna mixture into dish, top with wilted spinach, finish with mashed potato and sprinkle with parsley and cheese
  • 24. Bake for 20 minutes until well browned
  • 25. Serve hot
