I had my first hopper and coconut sambal when visiting Sri Lanka. Hoppers are a Sri Lankan staple often eaten with an egg inside for breakfast.

  • Water icon
    Water50 mlwarm
  • Dried yeast icon
    Dried yeast7 g
  • Sugar icon
    Sugar3 teaspoons
  • Rice flour icon
    Rice flour400 g
  • Salt icon
    Salt¼ teaspoon
  • Coconut milk icon
    Coconut milk800 ml
    Method

  • 1. In a clean small bowl mix together dried yeast, water and sugar; set aside
  • 2. Let rest - approx 15 min
  • 3. Add rice flour and salt to a clean medium bowl and mix in yeast mixture until combined
  • 4. Mix in coconut milk
  • 5. Add more coconut milk bit by bit while stirring occasionally
  • 6. Stir until thick but still runny
  • 7. Let rest - 30 min
  • 8. Pre-heat a clean frying pan
  • 9. Stir the batter and pour it into the pan
  • 10. Swirl the pan in a circular motion so batter spreads out and covers base of pan. Cover and cook until light golden - approx 3 min
  • 11. Remove and serve
