I had my first hopper and coconut sambal when visiting Sri Lanka. Hoppers are a Sri Lankan staple often eaten with an egg inside for breakfast.

Step preview

  1. Prep and set aside water: warm
  2. Get a clean small bowl
  3. Add dried yeast
  4. Add prepared water
  5. Add sugar
  6. Stir with tablespoon then set aside
  7. Let rest - approx 15 min
  8. Get a clean medium bowl
  9. Add rice flour
  10. Transfer content of small bowl to medium bowl
  11. Stir until combined
  12. Add coconut milk
  13. Mix until thick
  14. Add coconut milk bit by bit while stirring occasionally
  15. Stir until thickened
  16. Let rest - 30 min
  17. Add salt
  18. Pre-heat a clean frying pan
  19. Stir medium bowl
  20. Transfer content of medium bowl to frying pan bit by bit
  21. Swirl
  22. Cover until light golden - approx 3 min
  23. Remove
  24. Serve
