  1. Pre-heat oven - 218°C
  2. Add unsalted butter to a clean saucepan
  3. Heat until foamy - medium heat
  4. Add all purpose flour to the saucepan
  5. Stir until pale and light - approx 3 min
  6. Add milk to the sauce gradually
  7. Stir until thick - approx 4 min
  8. Remove
  9. Whisk in wholegrain mustard and nutmeg the sauce
  10. Season with kosher salt
  11. Add rustic french bread to a clean work surface
  12. Add sauce to bread evenly
  13. Line a clean baking sheet with parchment paper
  14. Transfer half of bread to baking sheet
  15. Add ham and gruyère cheese to the cheese mixture
  16. Place bread on cheese mixture
  17. Top with gruyère cheese
  18. Sprinkle with mixed dried herbs
  19. Bake until lightly browned - 10 min
  20. Serve
