A healthy and colourful granola with lots of good stuff in it. Makes a nice big batch. Serve with yogurt and fresh fruit or munch it on it's own for a snack.

    Method

  • 1. In a clean large mixing bowl mix together jumbo oats, almonds, sunflower seeds, pumpkin seeds, chia seeds, shredded coconut, ground cinnamon and sea salt
  • 2. In a clean small bowl mix together coconut oil, vanilla extract, almond extract and maple syrup
  • 3. Transfer oil mixture to oat mixture and mix together
  • 4. Prepare 2 clean baking sheets with parchment paper
  • 5. Transfer oat mixture to the baking sheets and spread evenly
  • 6. Bake - 40 min, 150°C
  • 7. Let cool - approx 5 min
  • 8. Transfer granola to plastic container
  • 9. Mix in dried apricots and goji berries
  • 10. Serve
