Worth it solely for the vanilla-cinnamon-apple smell that will fill your home when baking these cookies. This recipe uses coconut oil, maple syrup and wholewheat flour for a healthy(ish) cookie. They are the perfect breakfast on-the-go or with a cup of tea.

Step preview

  1. Add quick-cooking oats, whole wheat flour, baking powder, ground cinnamon and sea salt to a clean large mixing bowl
  2. Whisk together
  3. Add coconut oil, egg and vanilla extract to a clean large mixing bowl
  4. Whisk together
  5. Add maple syrup to the large mixing bowl
  6. Stir
  7. Transfer dry ingredients to large mixing bowl bit by bit
  8. Stir until just combined
  9. Mix in red apple to the large mixing bowl
  10. Chill in fridge - 30 min
  11. Pre-heat oven - 160°C
  12. Line a clean baking sheet with parchment paper
  13. Scoop content of large mixing bowl onto baking sheet evenly
  14. Flatten slightly
  15. Bake - 14 min, 160°C
  16. Let cool - approx 10 min
  17. Serve
