Worth it solely for the vanilla-cinnamon-apple smell that will fill your home when baking these cookies. This recipe uses coconut oil, maple syrup and wholewheat flour for a healthy(ish) cookie. They are the perfect breakfast on-the-go or with a cup of tea.

  1. Prep and set aside coconut oil: melted
  2. Prep and set aside egg: room temperature
  3. Prep and set aside red apple: finely chopped
  4. Get a clean large mixing bowl
  5. Add quick-cooking oats
  6. Add whole wheat flour
  7. Add baking powder
  8. Add ground cinnamon
  9. Add sea salt
  10. Whisk together
  11. Get a clean large mixing bowl
  12. Add prepared coconut oil
  13. Add prepared egg
  14. Add vanilla extract
  15. Whisk together
  16. Add maple syrup
  17. Stir
  18. Transfer dry ingredients to large mixing bowl bit by bit
  19. Stir until just combined
  20. Mix in prepared red apple
  21. Chill in fridge - 30 min
  22. Pre-heat - 160°C
  23. Line a clean baking sheet with parchment paper
  24. Scoop content of large mixing bowl onto baking sheet evenly
  25. Flatten slightly
  26. Bake - 14 min, 160°C
  27. Let cool - approx 10 min
  28. Serve
